- Wash poha lightly, and keep it aside for 10 minutes.
- Take a pan and heat oil on a medium flame. Then add mustard seeds, chopped onions (saute until turned brown) and green chillies.
- Add sprouts and sauté them for another few minutes on a medium flame.
- Add salt and sugar and let it cook for a couple of minutes. Now add poha and lemon juice and mix it well.
- Stir continuously while cooking for 2 to 3 minutes.
- Garnish it with coriander leaves. You can enjoy it with tea or coffee.
2. Besan Pancakes
Besan has a low glycemic index that helps in utilising the blood sugar level effectively and is a perfect choice for an early morning breakfast. To prepare this recipe you need 100 grams of besan, 100 grams of each chopped fenugreek and chopped spinach, 50 grams of grated carrots, 5 grams of grated ginger, 10 grams of curd, 2 chopped green chillies, 5 twigs of curry leaves, 1 to 2 tbsp of cooking oil and salt as per taste.
- Make a coarse paste of besan. Then add grated ginger, green chilies, spinach, carrots, fenugreek leaves and a pinch of salt to it and mix thoroughly.
- Now divide the batter into desired no. of portions you want to make.
- Take a pan and pour a tbsp of cooking oil in it. Put one portion of the paste and let it cook on a slow flame.
- Flip the pancake once the base is cooked.
- Have it with pickle, curd or tea.
3. Cheese Toast
With the goodness of mozzarella cheese and whole wheat bread, cheese toast is a delicious and healthy Indian breakfast to lose weight. Also, it is easy to make and keep your full for a longer period. You need 4 slices of whole wheat bread, 4 tbsp of grated mozzarella cheese, 10g each of chopped and boiled green peas, cabbage, capsicum and cauliflower, 40g of mashed boiled potatoes, 20g of chopped onions, 2 tbsp of green chillies, 10g of coriander leaves, 2 to 3 tbsp of oil, 1 to 2 tbsp of garam masala, 1/2 tbsp chilli powder and salt as per taste.
- Take a wide pan and pour oil in it. Heat it, add chopped onion and green chillies and saute it for one minute on a low flame.
- Put mashed potatoes, and all the mixed veggies, chilli powder, coriander leaves, garam masala, and salt to the pan. Mix it and let it cook for at least 2 to 3 minutes on a medium flame.
- Divide the total mixture to four equal size toppings when it is cooked.
- Use a toaster for the whole wheat bread.
- Spread each serving size of mixture or topping to the toasted bread slices.
- Add 1 tbsp of grated cheese on each toast and let it bake for 3 to 5 minutes in a preheated oven at 200°C.
